Kerchig Soup
Ingredients: • 3 tbsp ghee • 2 tbsp butter • 1 cup cracked wheat (Tsavar) • 2 cups or 300g pumpkin • 200 g meat cubes • 100 g walnut • 3 onions, finely chopped • 4 cups of water • 4 to 6 garlic cloves • 2 tbsp dried mint • 2 tbsp chili paste • Salt and pepper to taste
Directions: Peel the pumpkin and cut it into cubes In a large cooking pan, put the ghee and brown the chopped onions. Add the meat and stir until softened and lightly golden. Add the pumpkin cubes and stir for 2 to 3 minutes. Add the cracked wheat and water. Stir in the chili paste, walnut, salt and pepper and let it boil. Reduce the heat and cook until wheat is tender. In another frying pan, add butter and sauté the mashed garlic and dried mint. Add the garlic mixture to the soup and remove from heat. Serve Hot.
