Vegetable Soup with Shrimps
Ingredients: • 300 g shrimps • 1 tbsp flour • 2 onions • 1 small eggplant • 2 squash • 300 g Swiss chard • 1 cup chopped celery or green onion • 4 cups fish stock • 2 tbsp vegetable oil • 2 tbsp grapegar • 2 tbsp lemon • 50 g ginger • 2 garlic cloves, crushed • Salt, pepper, cumin and red pepper
Directions: In the cooking pan, put the vegetable oil and sauté chopped onion, peeled squash and eggplant cubes, Swiss chard, celery and/or green onions until it is golden brown. Add fish stock. Dilute the flour with water and add it to the pan stirring continuously allowing the soup to thicken a little Marinate the shrimps in lemon juice, grapegar, ginger and crushed garlic and grill them. Add salt, pepper, red pepper and cumin to the soup. Serve the soup in a deep plate with the grilled shrimps and decorate with tomatoes.
