Ingredients For the filling
• 1.5kg beef
• 300g lamb fat
• 2-3 onions
• 2 tbsp melted butter or ghee
• Salt, red pepper and seven spices to taste
• Sumac For the tomato sauce
• 3tbsp tomato paste
• 1tbsp chili paste
• 1l beef broth
• 100g ghee For the Matsoun
• 5 cups yoghurt
• 5 garlic cloves
• Salt to taste
For the dough
• 1kg flour
• Water | as needed |
• 2 eggs
• 1 tbsp salt
• 1 cup of melted ghee
Directions
Sift flour, make a well in the centre, add whisked eggs, salt, ghee and water and knead with your hands until you get stiff dough. Leave the dough to rest for 1 hour. Divide the dough into 3 parts, roll each part separately, and cut into small squares. Mix the beef, lamb fat, onions, and spices. for the filling: Put the filling in the square dough and fold it to form boat shape. Grease the tray with ghee and put the manti in it and cook in the oven until red. Mix all the ingredients of the tomato sauce in a pan and boil it.
