GAGHAMPOV DOLMA

Ingredients: • 1 cabbage • 500 g minced meat with lamb fats • ½ cup rice • 1 cup of dried apricot • 2 onions • 4 garlic cloves • 1 cup of dried dill, thyme and fresh mint • 1 cup of pomegranate molasses • 2 tbsp chili paste • ½ cup lemon juice • 2 tbsp tomato paste • Salt and black pepper

Directions: Rinse the cabbage and cut it into wedges. Put the cabbage to boiling water with 1 cup of lemon juice – to give it a taste like lemon- and a pinch of salt and leave it uncovered until it becomes tender. Remove from water and keep it aside to cool down. Chop the onions. Wash the rice and drain. To prepare the stuffing, put the rice in a bowl; add the minced meat, chopped onion, mashed garlic, dried dill, pomegranate molasses, thyme, fresh mint, apricot, chili paste and mix well with salt and pepper. Divide the stuffing mixture among the cabbage leaves and roll it. In a large skillet over medium heat, place the cabbage rolls and pour water, 1 cup of lemon juice, tomato paste, pomegranate molasses,salt and pepper over the top. Cover and bring to a boil. Reduce heat to low and simmer for about 40 minutes.
