BASOUTS DOLMA

Ingredients: • 1 cabbage • 4 onions • 8 plums • 1 cup lentils • 1 cup chickpeas • 1 cup red kidney beans • 1 cup bulgur • 2 tbsp tomato paste • 2 cup dried herbs (thyme, dill, coriander and mint) • 4 tbsp of pomegranate molasses • 2 cups lemon juice • 4 tbsp chili paste • Salt, pepper and red pepper

Directions: Rinse the cabbage and cut it into wedges. Put the cabbage to boiling water with 1 cup of lemon juice and a pinch of salt and leave it uncovered until it becomes tender. Remove from water and keep it aside to cool down. Chop the onions and the plums. To prepare the stuffing, fry the chopped onions in a cooking pan with oil until brown. Stir in the plums, lentils, boiled chickpeas, boiled kidney beans, bulgur, tomato paste, pomegranate molasses, salt, pepper, red pepper and the dried herbs. Add 1 cup of lemon juice and cook for further 5 minutes. Divide the stuffing mixture among the cabbage leaves and roll it. In a large skillet over medium heat, place the cabbage rolls and pour water, 1 cup of lemon juice, chili paste, salt and pepper over the top. Cover and bring to a boil. Reduce heat to low and simmer for about 40 minutes
