ARMENIAN CARROT WALNUT CAKE

Ingredients: • 6 pcs. Carrots • 3 cups flour • 6 pcs. Egg • 1 cup oil • 1.5 cup sugar • 3 tbsp. baking powder • ½ tbsp. vanilla • 1 cup Carrot juice • 3 cups shredded carrots • 1 cup chopped walnut • ½ cup raisin • ½ cup coconut powder • 2 tbsp of cinnamon powder

Directions: Beat the eggs in the mixer with vanilla for 5 – 8 minutes. Peel and shred the carrots and put them in 1 cup of water with sugar for 5 minutes. Add on the beaten egg, flour, sugar, oil and baking powder and mix them. Take the carrots out of the water and add on the mixed with chopped walnut, carrot juice, raisin, coconut powder and mix them all. Put oil in the tray add the mixture and bake the cake in the oven for 30 -35 minutes. Present it with sugar powder, cinnamon and raisins.
