Mshosh Salad

Ingredients: • 200 lentils • 1 cup apricot • 2 onions • 2 cucumbers • Fresh rocca, Swiss chard and parsley • ½ cup walnut • 4 tbsp olive oil • 3 tbsp lemon juice • Salt to taste • ½ cup of dill • 4 tbsp of apricot juice

Directions: Boil the lentils with salt and drain. Let it cool down. Cut the apricot and soak it in water for 10 minutes. Remove it from water and drain. Slice the onions. Peel and cut the cucumbers into small cubes. Wash and chop the rocca, dill, Swiss chard and parsley. Put all the ingredients in a dish. Add salt, lemon juice, olive oil, apricot juice and mix all up. Decorate with fresh dill and serve.
