VOLOROV DOLMA
Ingredients: • 2 kg eggplant • 3 onions • 500 g ground beef • 1 cup of pomegranate • 1 cup of raisin • 3 tbsp ghee • 4 tbsp oil • 2 cups beans (Fasoulia beans) • 2 cups dill, chopped • 1 cup of pomegranate juice • Salt, pepper and red pepper • 1 cup of rice
Directions: Clean the eggplant and scoop out the seeds. Finely chop the onions and sauté with ghee and oil in a cooking pan until golden brown, Add the ground beef, pomegranate, raisin and cook. Add the chopped dill, beans, rice, salt, pepper and red pepper. Stuff the eggplant shells with the beef mixture. In a large skillet over medium heat, place the eggplant. Add water and 1 cup of pomegranate juice. Cover and bring to a boil. Reduce heat to low and simmer for about 40 minutes. You can serve it with garlic yoghurt mix.
