SHRIMPS WITH VEGETABLES
Ingredients: • 200 g shrimp • 1 carrot, 1 onion, lemon slices, bay leaves and celery for boiling the shrimps • 2 onions • 2 carrots • 2 red bell peppers • 2 green bell peppers • 1 cup green peas • 2 tbsp lemon juice • 1 tbsp chili paste • Fresh dill and coriander • 4 tbsp oil for frying • Salt and pepper
Directions: Put the shrimps into salted boiling water. Add to the broth one carrot, celery stalk, one onion, lemon slices and a bay leaf and boil. Remove the shrimps from water, allow cooling. Peel and chop the carrots into long slices. Slice also the onions, red and green bell peppers. In the cooking pan, fry the chopped onions with oil until brown. Add the carrots, red pepper and green pepper. Add the green peas, lemon juice, chili paste, fresh dill, coriander, salt and pepper. Stir in the shrimps and remove from heat.
